A week or so ago I decided to try out Jamie Oliver’s Perfect Chicken Balti recipe and see how this compared to a Chicken Balti recipe that is in one of my generic recipe books. I was expecting Jamie Oliver’s version to be a little bit better, mainly as I knew it had been put together by a professional chef as opposed to an unnamed chef or group of chefs. But the Jamie Oliver recipe definitely blew the other one out of the park.
The two dishes came out looking completely different even though the same spices were used. The colour was a lot more developed through the Jamie Oliver recipe, as was the intensity of flavour. For the most part, it was hard to identify the flavours within the other Chicken Balti recipe and it left me wondering what epitomised Chicken Balti and distinguished it from other Indian curries. The flavours were muted for the most part, but completely overwhelmed by the level of hot spiciness. Jamie Oliver’s recipe on the other hand was a lot more balanced, and to be honest, what I would expect from his recipes, and a great Indian dish.
The freshness of the ginger and coriander paired with the warmth of the garam masala and cumin was perfect. I was disappointed I wasn’t able to find ground cloves on short notice when preparing this dish as I think it really would have taken this dish to another level. My partner and I absolutely loved this dish, and it is now up there in our favourite Indian curry recipes with Gordon Ramsay’s Coriander, Coriander and Chilli Butter Chicken. If you are wanting to cook any Chicken Balti recipe, then I would definitely suggest Jamie Oliver’s version. It is easy to make, soothing and delicious. A perfect comfort curry for the winter months!
