This bread recipe was thrown together one night after work as I had invited my self around to a friends the following night for dinner and was unsure what to bring. It turned out that we were going to be having a peanut satay for dinner so it worked out really well that I decided to make this flatbread. The garlic and rosemary topping of course really matched the gorgeous slow cooked satay that my friends made for our dinner. This recipe is easy to throw together, can be done on a week night after work and does not require a lot of kneading or rising time.
- 1 1/2 c flour
- 1 t yeast
- 1 t sugar
- Pinch of fine, table salt
- 2/3 c warm water
- 1/2 c olive oil, plus an extra 1 T oil
- 1/4 c chopped, fresh rosemary
- 2 garlic cloves, diced
- 1 T coarse grain salt
1 In a small bowl combine the water, yeast and sugar. Cover and let it activate for 5 minutes. The yeast should dissolve and then start to bubble. If it does not then discard and start over.
2 In a large bowl sift in flour and fine salt then add the 1/2 c oil and foamy yeast mixture. Fold together until the mixture forms a dough.
3 Flour a large chopping board, or rolling mat. Knead the dough for about 10 minutes or until the dough is soft, smooth and bounces back when prodded with a finger. Add flour little bits at a time as and when required.
4 Preheat oven on 180°C on fan bake.
5 Flour a rolling pin, and then roll out the dough to a 2 cm thickness. Place on a baking tray (it does not need to be lined due to the high volume of oil in the dough).
6 Poke small indents in the top of the dough with your index finger then smear with the 1 T of olive oil. Scatter over the rosemary, garlic and coarse salt.
7 Cook for 20-25 minutes or until cooked through and golden.
